Insalata di Capri

          Roma Tomatoes: 4 Ripe
          Mozzarella Cheese : 2 Medium Balls
          Capers: 2 Teaspoons, finely chopped
          Olive Oil: 6 Teaspoons
          Salt to taste
          Vinegar
          Basil: 10 Fresh leaves

          Cut the tomatoes into thin slices and the Mozzarella cheese into thin slices. Arrange the
          slices, alternating tomatoes and Mozzarella on a service dish.
          Prepare the sauce by blending oil, salt, vinegar, and chopped capers. Drizzle over the
          tomatoes and Mozzarella and garnish with basil leaves.
